In Lawrence, we are blessed--blessed, I tell you--with original restaurants. Last weekend, Nice Dad was in town and took us out for lunch at one such place, which is called the Free State Brewing Company. I had the special that day, butternut squash and black bean enchiladas, and they were so tasty that I promised myself I would find a similar recipe. So, of course, topping this week's list:
