Since the first time I saw this recipe--the easiest sexiest salad in the world by Jamie Oliver--I've been keeping an eye out for figs to appear in my grocery store. Then today, when I finally spotted some, I didn't have the darned recipe with me!
Thankfully, a call to Mom and a quick internet search saved the day--thanks Mom!
As its name says, this is the easiest, sexiest salad in the world. It's a little sloppy for a stand-up appetizer, but at a proper sit-down dinner party it would be an amazing little starter (or just have it for dinner, like we did!). As Jamie says the saltiness of the prosciutto, with the sweetness of the figs, with the creaminess of the cheese--mmmm!

Criss-cross the figs but not quite to the bottom. Then, using your thumbs and forefingers, squeeze the base of the fig to expose the inside. Place the figs in a dish, weave around 1 slice of Parma ham or prosciutto per fig, throw in some slices of buffalo mozzarella and rip over some green or purple basil. Mix 6 tablespoons of extra virgin olive oil, 3 tablespoons of lemon juice, a tablespoon of good honey and some sea salt and freshly ground black pepper together in a bowl and drizzle everything with this dressing. Serve with chunks of bread to mop up the juices.
