In the first of what I'm calling our "alterna-grain" experiments (pursuant to this post), tonight we tried this Quinoa, Mango, and Black Bean Salad. While it most certainly did not fit well with the weather today (which was cold and snowy and rainy), the gingery-mango-ness of it all was delicious. And the quinoa--which looks like teeny versions of the planet Saturn when it's cooked--bound everything together and gave it a nice nutty flavor.
I can't wait to try it again...but maybe not until June or July.
