Nice Mom made this at Christmas time, and everyone really liked it so I thought I'd chop up a batch for a potluck later this week. It's just the right mix of sweet and spicy, and it looks really pretty too! Here's the recipe:
- l bag fresh or frozen canberries (12 0z)*
- 1 Granny Smith apple. peeled, cored amd cut in eigths
- 1/2 large red pepper. cut in chunks
- 1/2 medium red onion cut in chunks
- 3/4 cup sugar
- 1/3 cup apple juice
- 3 Tbsp chopped fresh cilantro
- 2 Tbsp chopped pickled jalapeno pepper
- 1tsp grated lime zest
Put cranberries, apple, red pepper and onion in food processor. pulse until
chopped. Transfer to a large glass bowl. Stir in remaining ingredients
until blended. Makes about 4 cups and can be made up to 2 weeks ahead of time.
*I used "Craisins" (dried, sweetened cranberries) because I couldn't find any other kind. Because they already had sugar added, I omitted the 3/4 cup of sugar from the recipe.
